Our credo “Questa casa non è un albergo” (“This house is not a hotel”) comes alive in the palazzo’s kitchen, where an intimate and inviting approach to hospitality makes guests feel as if they are part of the family. With an eye towards what is essential, the kitchen brings guests back to a simpler, more holistic time. Local farmers come daily and in person to the hotel, allowing our seasonal menu to offer a healthy cuisine, with dishes that are free of all artificial and unnecessary components. By using only nearby ingredients and combining ancient and contemporary techniques, the palazzo kitchen is able to consistently produce the outstanding dishes that have been celebrated in Puglia for decades.

After experiencing the delightful taste of traditional Apulian dishes prepared by our local chefs, many of our visitors are excited to take things a step further by learning how to cook these exquisite meals themselves. At Palazzo Daniele, our enjoyable cooking classes, guided by our team of experienced local chefs, provide a hands-on journey into ancient culinary techniques of Italy. Participants will discover the art of making local specialties such as handmade pasta and fresh "primo sale" (ricotta cheese). After preparing the meal, guests will have the pleasure of savoring their own creations during dinner.
