Uniting principles of local-scale and community, Palazzo Daniele’s culinary philosophy is built upon centuries of Salento and Apulian traditions. Our credo “Questa casa non è un albergo” (“This house is not a hotel”) comes alive in the palazzo’s kitchen, where an intimate and inviting approach to hospitality makes guests feel as if they are part of the family. With an eye towards what is essential, the kitchen brings guests back to a simpler, more holistic time. Local farmers come daily and in person to the hotel, allowing our seasonal menu to offer a healthy cuisine, with dishes that are free of all artificial and unnecessary components. By using only nearby ingredients and combining ancient and contemporary techniques, the palazzo kitchen is able to consistently produce the outstanding dishes that have been celebrated in Puglia for decades.

When we travel, we value authentic local experiences, but it's not often that we can find them right at the hotel with the chefs. Enter the kitchen at Palazzo Daniele and you'll be greeted by our four female chefs, each with a strong personality and deep roots in the Salento region. By honoring the seasons and using simple, local ingredients, not only do these women create exceptional dishes but also share stories about their hometowns and traditions. Junior Suite

Facing the lush courtyard, the Junior Suites feature masterworks by celebrated artists, with most of the suites presenting original frescoes ceilings. Delight in a king bed, a bathroom with walk-in shower, and custom furnishings, such as a black steel-framed wardrobe,that heighten the aristocratic setting.

Suite

Featuring lovely views of the town’s central square, as well as frescoes ceilings and floors from the 19th century, the Suites are steeped in Italian history. Custom-made pieces, contemporary artwork, a king bed, and a bathroom with walk-in shower round out the exquisite scene.

Royal junior Suite

Showcasing a lightbox by Simon d’Exea that also serves as an art piece and a 6-meter-high rain shower that falls into a basin designed by Italian artist Andrea Sala, the Royal Junior Suite is truly a majestic experience. Enjoy a king bed, courtyard view, and vaulted ceilings.

Through an ancient secret door and up a stone staircase, the Black Suite is an 85-sqm penthouse atop the palazzo boasting minimal design, important artworks, a bedroom, living room, full kitchen, and a1,500-sqm private terrace that circles the palazzo’s central courtyard.

More than a trend, slow food is a lifestyle at Palazzo Daniele. Every day, farmers come to the palazzo to present their products to our cooks. Indeed, all our suppliers are locals, which means that the journey from the farm to your table is short, daily, and delicious.

OUR NATURAL WINES

The wines we offer at Palazzo Daniele reflect our deep connection to the land and our commitment to traditional, hands-on wine-making practices. We proudly serve natural wines made through spontaneous fermentation with indigenous yeasts and without the use of chemicals. Each wine represents the unique style of individual winemakers rather than the uniformity of a mass-produced industry.

We are firm believers that consuming foods that are in season equates to a healthier diet. It also means experiencing fresh products at their peak flavor. Palazzo Daniele never uses frozen or canned ingredients. Our menu constantly evolves to utilize and share the finest ingredients available each month, ensuring that you experience the pinnacle of Italian cuisine.

SUSTAINABLE INGREDIENTS

Italy has always been well-known for its cuisine, but now it is gaining recognition for its commitment to sustainable agriculture. Palazzo Daniele promotes the belief that organic, pesticide-free farming yields food that benefits both the environment and our health. We have intimate knowledge of the land and the farmers responsible for all our ingredients.

After experiencing the delightful taste of traditional Apulian dishes prepared by our local chefs, many of our visitors are excited to take things a step further by learning how to cook these exquisite meals themselves. At Palazzo Daniele, our enjoyable cooking classes, guided by our team of experienced local chefs, provide a hands-on journey into ancient culinary techniques of Italy. Participants will discover the art of making local specialties such as handmade pasta and fresh "primo sale" (ricotta cheese). After preparing the meal, guests will have the pleasure of savoring their own creations during dinner.
