Palazzo Daniele’s philosophy is crafted upon layers of ancient Salento and Apulian tradition. The focus of the Palazzo’s kitchen has shifted, and is bringing guests back to the very beginning, respecting the seasons along with simple, nearby ingredients that allow for outstanding dishes created by combining ancient and contemporary techniques. The Palazzo has welcomed four female chefs, each with strong personalities and generational roots in the Salento region. The kitchen’s new focus, is keeping each dish essential – free of all artificial, unnecessary components.

 

 

OUR NATURAL WINE PHILOSOPHY

Our wine speaks of love for the land and respect for times and manual practices far from business at all costs.  Natural wine today is a consolidated reality, culturally necessary, made up of people, sacrifices, real wines in short, spontaneous fermentations, indigenous yeast and zero use of chemistry.

Orangery and Kaffeehaus

At the far end corridor of the palazzo you’ll find the amazing garden, “Giardino degli aranci”, with green pastures filled with orange trees. In the summertime, guests can enjoy cocktails and an aperitivo while listening to music in the garden.

Inside the garden is the Kaffeehaus, a small typical ancient building where past and present meet. A place where nobles sat and sipped coffee and hot chocolate while entertaining guests. The Kaffeehaus can host special dinners for two.

The black bottom pool is the place to be in the summer time. Take your time to lounge at the pool, relax in our steambath or sauna and enjoy around and enjoy the delights of our local kitchen by Donata and the best selection of our cocktails at the pool bar.

 

Our SPA & pool are exclusively open for our guests from 8 am to 9 pm
